Our Chef
Chef Jamie Huynh draws inspiration from Canada’s West Coast, grounding his culinary approach in seasonality and a deep connection to place. He honed his skills in Vancouver’s acclaimed kitchens, including Fairmont Pacific Rim and Hawksworth, where he developed a refined, technique‑driven style.
He later helmed the kitchen at Clayoquot Wilderness Resort, an experience that strengthened his commitment to working closely with the region’s remote landscape and its exceptional ingredients. Chef Huynh’s cuisine reflects a harmonious balance of precision and creativity, firmly rooted in the sensibilities of the West Coast.
